Tamiz Brownies

One cup of cocoa spread, a loaf tin, and brownies with no butter and no dairy.

About These Brownies

The brownie was born in Chicago at the end of the nineteenth century, when a chocolate dessert was wanted that would pack neatly into a box. It came out of the oven low, dense and unrisen, and stayed that way.

A classic brownie is built on butter, melted chocolate and a lot of patience. Here everything starts and ends with one cup of our cocoa spread, made from almonds, macadamia nuts, organic cocoa and coconut sugar. It brings the fat, the chocolate and the sweetness all at once, so there is no need for butter, dairy or hydrogenated oils.

The boiling water is the small secret. It melts the spread and the coconut oil into a smooth mixture, and it also opens up the cocoa and deepens the flavour. A combination of wholegrain spelt flour, almond flour and cornflour gives the right texture, moist inside with a thin crust on top.

The three spoonfuls we keep aside are the glaze. Spread them over the warm brownies and they melt into a glossy layer that sets as it cools. A few chopped almonds on top, and that is it.

The Recipe

One loaf tin  ·  Prep 35 minutes  ·  Vegan

Ingredients

  • A cup of Tamiz Cocoa Spread, keep 3 tbsp for the glaze
  • 50 g cold pressed coconut oil
  • 120 g boiling water
  • 3 tbsp maple syrup, optional
  • 80 g sifted wholegrain spelt flour
  • 50 g almond flour
  • 20 g cornflour
  • A level tsp baking powder
  • A tsp vanilla extract

Method

  1. 1Heat the oven to 180C.
  2. 2In a small bowl mix the boiling water, coconut oil and cocoa spread. Do not forget to keep 3 tbsp of spread for the glaze.
  3. 3In a separate bowl mix the sifted spelt flour, almond flour, cornflour and baking powder.
  4. 4Pour the wet mixture into the dry bowl and fold until the batter is even.
  5. 5Transfer to a loaf tin lined with baking paper.
  6. 6Bake for 25 minutes.
  7. 7Take it out of the oven, spread the reserved cocoa spread over the top, chill well, serve and enjoy.

Tips

  • The brownies improve after chilling, it is worth waiting before serving.
  • For a warm piece, heat it for 20 seconds in the microwave.
