Tzatziki has a long history. It appears in Greek and Turkish cooking as cacık, and its roots are most likely Persian, where yogurt was mixed with cucumber and herbs to cool a meal in the heat.
The days are getting warmer, meals are getting shorter, and our need for something cool, refreshing and nourishing grows. This tzatziki was born for exactly those moments, a few minutes of work, one bowl, and a feeling of summer on the plate.
It is based on Tamiz Yogurt Drink, rich, smooth and made with about ten percent almonds. It is not only excellent cold from the fridge, it also behaves beautifully as a base for dressings, for cold soups, or for tzatziki.
Sometimes the best ideas are also the simplest, and the tastiest.
Serve cold with toasted bread on the side. You can also serve it alongside roasted vegetables, or eat it straight from the spoon.
